Hello great readers and eaters!
Last week was scorching here in Dublin, and we ran out of SPF. (The same SPF I bought in June by the way, which remained despondently unopened during the preposterous fug of July and August).
And this week? I’m sipping hot chai, making vats of comforting soup, and pirouetting around the kitchen in thermal socks. Totally bonkers. (But who doesn’t love soup?)
Bread soup is pretty awesome. We adore a Spanish chilled soup called Salmorejo, which can be refrigerated in large jugs during hot summer months. The most delicious recipe has to be Ribollita, the legendary Italian bread soup.
Ribollita requires leftover bread and whatever else you have, making it particularly gratifying to shopper, to eater and to cook. It's not about penury darlings, it's about poetry.
