It's a really exciting time for vegetarian food. The art of cooking veg is undergoing a slick renaissance, backed by some of the world's most famous chefs, restaurants, authors and creatives. The concept of vegetarianism now feels outdated. We are all plant-rich people, rather than “meat-avoiders”. The former is about radical abundance. The latter? Not so much. In the famous words of Talia Pollock "there's a party in my plants, and you're invited!"
I know you’ll enjoy these simple satay skewers. They taste great with baby potatoes cloaked in olive oil and fresh coriander. Mushrooms are one of my top three favourite foods - they feel satisfyingly meaty with their umami lovebombs and rich texture, but offer so much more nourishment.
