My summer fireflies!
I am fizzing with optimism, bounce and good cheer. The piercing blue skies these days has that effect on everyone. Dublin is like a city of Smurfs, skipping around merrily, gushee-ing lovebombs and salutations. I loves it.
With this glorious weather, comes barbecue season. And as promised, here is a burger option for the vegetarian in your orbit. That might me tú féin (you), a loved one, or a surprise guest.
No messing around with patties, food processors, or patience. Here is a big steaky mushroom filled with velvety ricotta. Ushered between sesame buns or focaccia, these 'shroom burgers are the ultimate juicy, umami-bombing, veggie ambassadors. I can't help notice the reverie at the dinner table, especially among the green-eyed carnivores.
Portobello mushrooms are the big brutes you'll see lined up in long cardboard trays at the vegetable section of your local supermarket. I bagged 4 Portobellos in Dunnes Stores for €1, so this meal for 3 cost me around €5 including the potato wedges I muscled in on the side. Coming under budget feels so good - like an update being installed in my wallet.
