I’m back, with another summer recipe to help quell the muggy heat! Chilled soups are like an instant air conditioner for our bodies.
Flavour and health are a sassy little duo. It's my mantra for everything I make in the kitchen. I don't want health without flavour (who does?!) And flavour alone will not nourish or sustain my high-wattage mothering.
So this chilled soup recipe is a ballad to Taking the Hell out of Healthy. Yup. Instead of heavy cream, you’ll find that avocados can deliciously thicken soup while nose diving into some good fats and fibre.
Avocados are especially high in vitamin E and antioxidants, nature’s antidote to damaged skin (sunbathing, anyone?) As you know, I love a good swag of antioxidants and have exhausted every barista in my postcode about their magnificence.
Antioxidants help to disarm those renegade oxidants rusting our mainframe and bombing our brilliance. There are enough antioxidants and phytochemicals in avocados to keep Gwyneth blogging for decades. Combined with the plant power of green peas, fresh mint, prebiotic-rich onion and garlic, plus collagen-rich broth, think of this soup as Botox in a bowl!
The glucosamine and chondroitin present in home-made chicken broth can help to stimulate the growth of new collagen, reduce inflammation and repair damaged skin, explains Dr. Mark Hyman.
